SUPER SIMPLE HOLIDAY PEPPERMINT BARK RECIPE

November 18, 2019

One of my favorite and incredibly easiest treats to make is my holiday peppermint bark recipe. I usually make it once a year at Christmas!

I made it again this year and had a novel idea. Why not make this for the friends or family and package it up nicely.

Why I am here and who I am:

Hey mama, I am Trish— AKA Labor Nurse Mama. I am a labor and delivery nurse with over 15 years of high-risk OB experience. I am also a mama to 7 kids and have given birth to 6. This means I am quite familiar with the postpartum period and how to navigate it. I am the online birth class educator for Calm Labor Confident Birth and The VBAC Lab birth classes and the mama expert inside our Calm Mama Society a pregnancy & postpartum membership community! I am passionate about your birth and motherhood journey! You can find me over on IG teaching over 230k mamas daily. I am passionate about your birth and motherhood journey!

Peppermint bark is so easy to make. Like easy. To make.

The best part is you only need two ingredients.

White Chocolate Chips and Peppermint Candy!

Peppermints (I use candy canes). Otherwise, you can use peppermint candy from the dollar tree! I prefer Nestle White Morsels, but you can use what you prefer.

Step 1: Unwrap the candy! I used about 8-10 candy canes or about 25 peppermints.

(I usually make too much peppermint. I store the extra in a storage container.)

Step 2: Grind or smash the candy.

You have two options. Option number one is the easiest. Use a powerful blender (like my Ninja) to pulverize the candy.

Option two is the one I used for years before I got my ninja. Bag the peppermints doubled in two/gallon ziplock bags (doubled to prevent it from pocking holes and making a mess) to smash. Use a rolling pin or a meat tenderizer to smash the candy.

The peppermint should be mostly fine, but I like to leave a few larger pieces. It makes the peppermint bark look amazing.

Can you see the larger chunks in the image above?

Step 4: Melt the Chocolate

Dump the chips into a microwave-safe bowl. I use my large glass mixing bowl. Microwave it for two minutes.

When you take it out, it will not look melted. Stir with a spoon until smooth.

Step 5: Add Crushed Peppermint

Pour about 1/2 cup of crushed peppermint into the melted chocolate and stir until well mixed.

Step 6: Spread the mixture

The next step is to thinly spread the mixture onto a lid or a tray. I use a cheap thin tray from the dollar tree. I used to use a Tupperware lid from my "That'sa" bowl. I lost it so that is out the window. It was perfect!

Step 7: Garnish

Use some of the remaining crushed peppermint pieces and sprinkle over the peppermint bark. I love how the larger pieces make the holiday peppermint bark look so vibrant. Gently press the pieces into the mixture.

Step 8: Cool

Place the tray of peppermint bark into the refrigerator for 30 minutes to one hour.

Step 9: Break

Take the tray of peppermint out of the fridge and break the peppermint bark into pieces.

Step 10: Package

I chose these nifty little jars from Target. You know that trap right by the front door. The one that tricks you into thinking you are saving because everything is under three dollars. However, you end up spending like $50 anyway? Yeah, that area!

This group, board, and guidance have been absolutely invaluable.

I was extremely comfortable asking questions, making decisions and even though nothing went according to my "plan", I couldn't be any happier with the way everything went!!!
